Kim is an award-winning editor and copywriter with more than 25 years of experience. She started her career as a copywriter and broadcast producer at the Southeast’s largest full-service advertising agency, The Tombras Group. Since then, she has edited and written for a wide variety of clients, ranging from Fortune 500 companies to indie authors across multiple industries and topics.

She holds a bachelor’s degree in communications from the University of North Carolina, Chapel Hill, as well as a master’s degree in communications/advertising from The University of Tennessee, Knoxville.

Kim lives in Maryland with her husband, three children and a menagerie of pets.

Ingredients

  • 1 tablespoon vegetable oil
  • 2 medium onions, chopped
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 pounds lean ground turkey
  • 1/4 cup chili powder
  • 1 tablespoon bay leaf, crumbled
  • 1 tablespoon unsweetened cocoa powder
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground cinnamon
  • 28 ounce whole tomatoes
  • 3 cups beef stock or canned beef broth
  • 8 ounce tomato sauce
  • 45 ounce red beans, rinsed, drained

Directions

  1. Heat oil in heavy large pot over medium heat. Add onions; sauté until light brown and tender, about 5 minutes. Add oregano and cumin; stir 1 minute. Increase heat to medium-high. Add turkey; stir until no longer pink, breaking up with back of spoon. Stir in chili powder, bay leaves, cocoa powder, salt and cinnamon. Add tomatoes with their juices, breaking up with back of spoon. Mix in stock and tomato sauce. Bring to boil. Reduce heat; simmer 45 minutes, stirring occasionally.
  2. Add beans to chili and simmer until flavors blend, about 10 minutes longer. Discard bay leaves.
  3. Ladle over rice or into bowls and serve with bread. Top with low-fat sour cream, grated cheese, or minced red onion if desired.
  4. Can be cover and refrigerated and rewarmed over medium-low heat.
