If you love shrimp and avocado, try this fresh twist on these two summer favorites. It makes an elegant dish for lunch or dinner, and, if you buy precooked shrimp, there's no cooking required.
- 2 ripe avocados, cubed
- 1 cup cooked shrimp, cut into small pieces
- 2 green onions, thinly chopped
- 1 ripe tomato, cubed
- 2 tablespoons olive oil
- Juice of 1 lime
- Salt and pepper
For the Tartare
In a large bowl, mix together all of the ingredients for the tartare.
For the Dressing
In a small bowl, whisk the dressing ingredients until blended.
- Add the dressing to the tartare.
- Fill a round mold with the tartare, and then remove the mold, leaving the tartare stacked in a circular shape.
