As HealthyWomen’s editorial director, Kim oversees the production of all content and ensures that it is aligned with our mission, meets our high editorial standards and captures our brand voice.

Kim is an award-winning editor and copywriter with more than 25 years of experience. She started her career as a copywriter and broadcast producer at the Southeast’s largest full-service advertising agency, The Tombras Group. Since then, she has edited and written for a wide variety of clients, ranging from Fortune 500 companies to indie authors across multiple industries and topics.

She holds a bachelor’s degree in communications from the University of North Carolina, Chapel Hill, as well as a master’s degree in communications/advertising from The University of Tennessee, Knoxville.

Kim lives in Maryland with her husband, three children and a menagerie of pets.

Shredded Carrots With Dried Fruit Salad

Ingredients:
Salad:

  • 1 pound carrots
  • 4 tablespoons of a mixture of dried fruits and seeds, such as raisins, poppy seeds, sesame seeds or sunflower seeds
  • Fresh herbs, such as chives or parsley

Dressing:

  • 3 tablespoons olive oil
  • Juice of 1 orange
  • 2 tablespoons sherry vinegar
  • 1 large pinch salt

Directions:

  1. Cut the ends off the carrots and peel them. Wash the carrots with cold water and grate the carrots into a large bowl.
  2. Add the dried fruit mix to the carrots.
  3. For dressing, mix all ingredients together in a small bowl or jar, whisking or shaking to blend.
  4. Add the dressing to the carrots and mix well.
  5. Garnish with fresh herbs and serve.
