Cucumber Avocado Smoothie

This green smoothie will replenish needed nutrients for breakfast, lunch or post-workout snack—and the healthy fats and protein in the avocado and yogurt will keep you feeling full for hours.

Makes about 8 cups

Ingredients:

  • 3 cucumbers
  • 2 ripe avocados
  • 3 spring onions
  • 3 (5.3-6-ounce) Greek yogurts
  • 3 spring onions
  • Large handful of rocket (arugula)
  • 1 pinch chili powder
  • 2 tablespoons olive oil

Directions:

  1. Peel the cucumbers and cut them into small pieces.
  2. Cut the avocados in half, throw away the pit and scoop out the flesh.
  3. Thinly slice the spring onions.
  4. Add all of the ingredients to the bowl of a food processor or a blender. Blend for 3 minutes until the mixture is smooth and frothy.
  5. If desired, add some water to thin the consistency. Serve immediately or refrigerate until serving.
