I hope everyone had a good holiday weekend. I'm happy to report that here in the Northeast we finally got a break from the relentless rain that seemed like it would never end. It feels like summer is really here! And with that, I finally got to enjoy a cookout complete with some corn on the cob.

Did you know that there's a lot of nutrition packed into an ear of corn? Fiber, folate, thiamin, phosphorus, vitamin C plus magnesium.

I always associate corn on the cob with summer - although it certainly is available all year long (all you have to do is check your grocer's freezer, or prepare it and freeze some yourself).

Here are some fun facts about corn:
The average ear of corn has about 16 rows and contains about 800 kernels, plus one strand of silk for each kernel.

(Okay, maybe it's useless information, but the next time you're at a barbecue eating corn on the cob, you'll have something interesting to say!)
