Honey-Vanilla Custard (Flan)
Yields 6 servings
Creamy, sweet "flan" is the traditional Mexican meal-ender. This version is as guiltless as it is good-tasting.

In a medium saucepan, combine the milk, cornstarch and honey; mix well. Cook over low heat, stirring constantly, until the mixture combines and thickens. Be careful not to boil or scorch. Remove from the heat.
In a small bowl, stir about 3/4 cup (175 mL) of the warm honey-milk mixture into the egg substitute; return the mixture with egg to the honey-milk mixture in the saucepan. Place over low heat (do not let boil) and cook, stirring constantly, until the custard is thick, smooth and creamy, about 15 minutes. Stir in the vanilla; add the butter-flavored mix and continue stirring until blended. Transfer to a casserole and cover with plastic wrap. Chill for at least 2 hours.
