Avocados -- Delicious and Good for You!

This fruit (yes, fruit!) is cholesterol-free, sodium-free, low in saturated fat and rich in cancer-fighting nutrients. It's also a "low energy density" food--you feel full on fewer calories.

Quick and Easy: Avocado on Toast

 


avocado• Bread of any type
• Butter, for spread on toast
• Spoonful of a California avocado
• Pinch of salt

Directions:
Toast bread, med. Spread butter over bread. Scoop out a spoonful of avocado, spread over bread. Add a pinch of salt for taste.

Serves: 1 person


Avocado Fruit Kabobs


avocado• 1 fresh pineapple
• 3 large California avocados peeled
• 2 Pints strawberries, hulled
• Mixed salad greens
• Sweet Herbed Dressing (see below)


Directions:
Remove peel from pineapple. Cut in half lengthwise; remove and discard core. Cut pineapple pulp into 1/2-inch pieces. Cut avocado into 1/2-inch pieces. Arrange pineapple, avocado, and strawberries on skewers, beginning and ending with pineapple. Arrange over salad greens, and drizzle with Sweet Herbed Marinade. Serve immediately.

Sweet Herbed Dressing:
• 1/4 cup honey
• 3 tablespoons fresh lime juice
• 1/4 cup fresh cilantro leaves
• 1/4 cup fresh mint leaves
• 1/4 cup fresh parsley leaves
• 1/2 teaspoon paprika
• 1/4 teaspoon salt
• 1/4 teaspoon ground black pepper
• 1/4 teaspoon dried crushed red pepper
• 1/2 cup olive oil
Process first 9 ingredients in a blender until smooth, stopping to scrape down sides. Turn blender on high; gradually add oil in a slow, steady stream. Makes 1/2 cup.

Serves: 12 people

Caribbean Guacomole

 


avocado• 2 California avocados, about 1 pound
• 1/2 Tbsp fresh lime juice
• 1/2 Cup finely diced fresh mango
• 1/2 finely diced fresh pineapple, well drained
• 2 Tbsp dried shredded coconut (preferably unsweetened)
• 1/2 tsp crushed red pepper flakes
• 1/2 tsp salt

Directions:
Coarsely mash (DO NOT PUREE) avocados; stir in lime juice. Fold in remaining ingredients. Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap against the surface of the guacamole.

Serves: 6 people
