1 cup aduki beans, soaked, rinsed and drained
1 (3-inch) piece of kombu sea vegetable
2-inch slice fresh ginger
3½ cups water
2 cups peeled butternut squash, cut in ¾ to 1-inch dice
2 tablespoons fresh ginger juice
1 tablespoon shoyu
½ teaspoon sea salt
¼ cup thinly sliced scallions
